Instructions

  2. Prepare the Avocados: Cut each avocado in half lengthwise and remove the pit. Carefully peel away the skin (it should come off easily if they’re ripe). Place each avocado half flat-side down on your cutting board and slice into ½-inch thick wedges. You should get about 6-8 wedges per avocado. Handle gently—you want them to hold their shape!
  3. Set Up Breading Station: Arrange three shallow bowls in a row. In the first bowl, add the flour. In the second bowl, whisk together the eggs and water until well combined. In the third bowl, combine the panko breadcrumbs, Parmesan (if using), garlic powder, paprika, salt, black pepper, and cayenne pepper.   4. Bread the Avocado Slices: Working with one avocado wedge at a time, coat it completely in flour, shaking off any excess. Next, dip it into the egg mixture, turning to coat all sides and letting excess drip off. Finally, press it into the breadcrumb mixture, coating completely and pressing gently so the crumbs adhere well. Place the breaded wedge on your prepared baking sheet. Repeat with remaining avocado slices, spacing them about 1 inch apart so they don’t touch.

  6. Bake to Golden Perfection: Place the baking sheet in your preheated oven and bake for 12-15 minutes, flipping the fries halfway through cooking (around the 7-minute mark), until they’re golden brown and crispy on both sides. Frying Instructions (Alternative Method): If you prefer to fry your avocado fries: Heat 2-3 inches of vegetable oil in a heavy pot to 350°F. Working in batches (don’t overcrowd!), carefully lower breaded avocado wedges into the hot oil using a slotted spoon. Fry for 2-3 minutes, turning once, until golden brown on all sides.
