  • ¼ teaspoon garlic powder

  • ⅓ cup red grapes, quartered
  • ⅓ cup dried cranberries

Instructions

  1. Prepare the Chicken: If using rotisserie chicken, remove the meat from the bones and shred or dice it into small, bite-sized pieces. You’ll want the pieces fairly small so they fit nicely on your serving vessels. Place the chicken in a large mixing bowl.
  2. Chop the Vegetables: Finely dice the celery into very small pieces (about ¼-inch). Mince the red onion as finely as possible. Chop your fresh herbs. Add all of these to the bowl with the chicken.
  3. Make the Dressing Base: In a small bowl or directly in the large bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, pepper, and garlic powder. Whisk or stir until smooth and well combined.
  4. Combine Everything: Add the dressing mixture to the chicken and vegetables. Using a rubber spatula or large spoon, gently fold everything together until the chicken is evenly coated and all ingredients are well distributed. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  5. Add Optional Ingredients: If you’re including grapes, cranberries, nuts, apples, or bacon, fold them in now. Be gentle to keep the texture nice.
