Instructions

  2. Prepare the bread by arranging the thick slices on your prepared baking sheet or baking dish. Make sure they’re not touching so the edges can get crispy. Use a pastry brush to lightly coat one side of each bread slice with melted butter.
  3. Make the custard yogurt mixture in a medium bowl. Add the Greek yogurt, eggs, sugar, and vanilla extract. Whisk vigorously for about 1-2 minutes until the mixture is completely smooth, creamy, and no lumps remain. The mixture should be thick but pourable, resembling loose pudding.
  4. Create a well in each bread slice (optional but recommended): Using the back of a spoon, gently press down the center of each bread slice to create a shallow indentation, leaving about a ½-inch border around the edges. This helps the custard mixture stay on top rather than sliding off.
  5. Spoon the custard mixture generously onto each bread slice, dividing it evenly among all four pieces. You want a thick, generous layer—about ¼ cup per slice. Use the back of your spoon to spread it slightly, but keep it mounded in the center for that signature look.
  6. Bake for 10-14 minutes until the custard is set but still slightly jiggly in the very center, and the top is golden with some caramelized spots. The edges of the bread should be crispy and golden brown. Don’t overbake or the custard will become rubbery.
  7. Cool for 2-3 minutes before serving. The custard will continue to set as it cools. Top with fresh berries, a dusting of powdered sugar, a drizzle of maple syrup, or enjoy it plain. Serve immediately while the toast is warm and the custard is creamy.
